3 year old apple pie

Sitting here finishing off what is left of some apple pie I made with organic apple juice, the usual spices, and some pot stilled heads I made a couple years ago. Its been sitting in the frig forgotten until today. Let me tell you that it is amazing! You will read here on HD that TIME will sort things out and make a good spirit. It is true. A couple years ago thus stuff was okay, at best. Today, I wish I made more. Merry Christmas

That sounds delicious. Ive got a jar of peach pie in the fridge. I may just have to pour a glass...

Heard it from a master distiller in Scotland, found it to be true in my own life experience.
