Hey y'all! Current mad science idea - caramel brandy.
Using cajeta quemada - Mexican caramel syrup, keeps at room temp. 46oz is equivalent to a pound, 450g, of sugar. So 400oz in 5 gal water is a perfect wash. Then... what yeast??
Ingredients are interesting here -
goat milk, corn syrup, sugar, sodium bicarb, potassium sorbate (preservative)
What would say 576g of protein (from goat milk) in a 9lbs sugar wash do, what would happen? Would an enzyme break down proteins, or are there only 'starch' enzymes available to us?

The potassium sorbate will be a problem there. It will keep the yeast from doing anything. And not sure if the goats milk would end up great anyway
