I have a couple drinks a week, so no problem for me. I DO have a problem with storage space for my aging stock tho ... a good problem to have, I guess.

distilling more than you drink can be a challenge, you just have to distill more or drink less:)

That's the way I handle it . Outproduce consumption .

I had the same problem. But, when I got rid of “the problem”, she cleaned out my 401(K)...but, she did leave me the stash of casks!

I have this problem all the time, as long as I get it into a aging barrel fairly quickly after I run and let it breathe I'm usually okay it's looking at all them jars on the counter that gets me thirsty, lol

Make more than you drink. Eventually the older ones will survive and be really good.

That neutral for gin spirit is long gone, but I still have plenty of that 2020 UJSSM left and plenty of the older whiskeys that I had made earlier.

I'm convinced that infrequent large ferments and hard out distilling sessions are the way to go to make bulk spirits.
My gin runs are small and frequent, often experimental and with seasonal ingredients.

The "sons of bastards" who started prohibition 100 years ago are long gone even if their legacy lives on.

My game plan is to make more and hide some of it from me and my drinking Kinfolk.
Sometimes there's advantages to having old timers memory loss.

After I kick the bucket, they will have a party searching the ponds and fence rows on the homestead for hidden booze. Maybe, korny kegs hidden amongst one of the scrap iron piles or under a fake stump.

Not to hi-jack or derail the subject.
But if the shit hits the fan. Scrap iron, steel and copper is more valuable and harder to be stolen from you than gold.

+1 with Chris,but lately for me it's been frequent large ferments,so my cabinets are finally overflowing with aging product.
And like shady I'm also hiding,but winters here mean only in heated outbuildings and cabins
