Since we was in the heart of apple season and fresh apple juice and cider is easily available I will share my apple pie recipe. One thing to not is as it cools you can warm it and add additional cinnamon and have more of a winter drink.
1 gallon apple juice
1 gallon apple cider
1/4 to 1/2 cup raw honey (amount to taste)
10-15 cinnamon sticks (I found sticks don't leave as much solids) (amount to taste)
Boil for 10-20 minutes and then let cool
When back to nearly room temp add alcohol
I don't add when boiling or hot due to rapid evaporation
I use 3 quarts of 140 proof neutral I make from BWTPW
I suggest having a couple people sample the drink to make sure it's not too strong.
I put it into a 3 gallon glass container in the refrigerator for about a week. Shake/stir once a day.
After about a week I put in individual jars/containers.

Sounds very good. I found aging for 1 month helps to smooth it out even more IMO.
