Bourbon Balls

This was made every year in my house and it was my first taste of bourbon for sure.

Chop 1 cup of nuts. We used pecans
Soak the pecans in (1/3 cup) 80proof Bourbon overnight. Cover with a lid.
Cream together half cup of butter and 1pound confectionery sugar.

Mix in the soaked nuts...should make a stiff paste.

form balls about the size of a large marble. Refrigerate them covered for an hour.

Melt a 1lb package of semi-sweet chocolate chips...Use double boil method.

Take the refrigerated balls and roll them around in the melted chocolate...covering completely (tooth picks help). Place the balls on some wax paper and allow them to cool.

Sweet with the heat of the Bourbon...Best holiday chocolates ever!
Eat enough of them and you won't care about the Diabetes that these are causing...
