grilled and seared tuna

I love tuna. I had to go to the fish mongers today for salmon and they had some beeeeeautiful tuna so I got 2 small steaks. Tonight I'm using a little soy sauce and lime with some coarse crushed black pepper. I am going to grill 1 piece to about medium and sear the other and leave rare.

Tomorrow I start on the rum soaked smoked salmon for the trip next week. I love cooking outside.

Some will consider it sacrilege, but quickly flambe tuna with mezcal, cucumber juice, then throw in pea shoots, thin slices of bosc pear, mint paste, green chili paste, capers and even soft goat cheese while plating. Sent from the gods themselves, but really a summer recipe just a bit out of date since it's now fall when you want to start switching towards more heartwarming flavor styles (maple, caramel, wild mushrooms, salmon, steak, etc).
The still is not a liar. Mash and ferment quality is 99.9% of your performance.
