Seared deer loin recipe

Take a 3 to 5 lb deer loin clean and cut into 4 in lengths.Dry and rub in salt and pepper Turn Off smoke alarms ,Preheat oven to 375f .Heat cast iron skillet on surface burner to smoking hot on high setting .add 1 tb spoon oil and add meat not touching for 3 minutes. Turn meat and put in hot oven for 10 minutes .Then take meat from skillet and place on a heated plate and cover with foil .Take 1/2 cup beef broth and pour in skillet use wooden spoon and stir simmering to its reduced by 1/2 .Add 1 tb spoon of worcestershire sauce.A tsp of minced garlic and 3 tb spoons butter . Simmer till thick pour over meat and serve.
I use a pot still.Sometimes with a thumper

Sounds tasty. Sear the flat ends or round sides?

Went out the other night with family.
Had the venison.
Tender and delicious.
