Since retiring it has been a full time job feeding the family. What do you do when you catch over 1000 shrimp per year. You look for new recipes. The following went really well with apple pie!
Shrimp Newburg
1 cup evaporated milk 1 tsp Worcestershire sauce
3 Tbs butter 1/8th tsp nutmeg
2 cups chopped shrimp 2 egg yolks
3/4 tsp salt 1 Tbs sherry
1/2 tsp paprika 6 slices buttered toast
Heat evaporated milk with butter in top of a double broiler. Add shrimp, salt, paprika, and nutmeg. Beat egg yolks, add Worcestershire sauce, and sherry and mix a little of the hot liquid with the yolks. Pour egg mixture into the sauce. Cook 1 or 2 minutes more.

Do you end up with scrambled eggs or just a thickened sauce?

Adding a little of the hot liquid to the yolk first is called “tempering the eggs”. Then you add the “warm” egg yolk into the pan. This avoids scrambling or lumps.
If in doubt leave it out.
