Bargnolino

This is my version of a Bargnolino, a sloes liquor very common in my area. It has a nice balance between the tart of the sloes, the strenght of the alcohol and the sweetness of the wine and sugar.

Ingredients:
1kg sloes (prunus spinosa/blackthorn fruits) they should be picked up at the first cold.
1 liter neutral 95%
1 bottle (75cl) red sweet wine. We use bonarda wine.
500gr white sugar

Procedure:
put the sloes in a jar with the alcohol. Store for 40 days in a cool dark place.
Remove the alcohol from the jar, leaving behind the sloes, filter it and store it.
Fill again the jar with the sloes with the red wine. Store for another month in a cool dark place.
Remove the wine from the jar, filter it and put it into a pan with the sugar. Heat until sugar is dissolved and let it cool.
Mix the alcohol with the wine, bottle and let it rest another month.
