This is an excellent read! It makes me want to send some stuff out to get tested.

The science behind the Art of Cutting. I'd like to see a read about the difference of Cane Spirits vs All Grain.

Looks like they used a fuel producing yeast. odd.

Id love to see a study like this with different yeasts side by side. Clean, estery, wine, beer, bakers etc.

I'd like to get my ferments tested, then my final product, and compare compounds, see if and what is different before and after distilling. Might be a good way to nut out crap that makes heads and off flavours?.
