Measuring Fatty Acids (Ester precursors) by Surface Tension

One of the hardest things to do with something like esters is to measure them empirically without expensive equipment like gas-chromatography and mass spectrometry systems. I'm going to start following Boston Apothecary's adventures trying to measure fatty acids by surface tension. it might be useful as an "ester estimator." I'll use this thread to report back results. Feel free to join in. We may want samples from various spirits to build a catalog for comparison purposes. As a warning this could be a total bust too. I won't know until after some experimentation.

This sounds very promising. To be able to even closely guesstimate the potential ester production would be good indeed. I think der wo only used a tablespoon of his muck-pot in a Navy Rum and it was maybe 50X too much...so this is good news indeed !

Whoa, you've got some cool toys! But "Du Noüy ring method" sounds like a suspect form of birth control ;)
