Artisan Spirit Magazine: Flavor in Whiskey/Gin

"Keeping it in: The flavor of Whiskey or the Gin" By Gary Spedding PhD of BDAS labs

The idea of this article is to cover fixatives in the spirits industry. It does this via a scientific background in understanding the chemical base flavors in spirits. It's chock full of terms that it explains. If you are pushing yourself to better understand the science behind spirits this is an amazingly good article to read. Unless you have a chem/Biochem background you will need to google a lot - I know I did. But its great start to building out the understanding of congeners and how to enhance/reduce the ones you do/don't want.

🎱 The struggle is real and this rabbit hole just got interesting.
Per a conversation I had with Mr. Jay Gibbs regarding white oak barrel staves: “…you gotta get it burning good.”
