I just mixed up a batch of rum, and got to thinking. What a luck Bohunk I am, I live a little over an hour drive from SugarDaddy, and can get panela when ever I need it. Last week, I picked up 200 lbs. I just mixed up 16 lbs of panela and about three gallon of water, put it on the stove and boiled it to reconstitute the panela. Then poured it into the fermenter, and added water up to the 12 gallon mark. Added a yeast bomb, and within a couple hours the bubbler was dancing like a jack hammer. I know SugarDaddy ships, but I am one luck guy just driving down the road a little.

Bohunk, thanks for the shout. I am not sure what you're doing on the barrel aging side of things but that's the best I've tried (including maybe 15-20 pro distilleries that we service) Next time you might need leave a little more behind than a half liter. That didnt make it through the weekend!
