That would be great, right? Would love to meet you & your family again. But maybe in Europe? First of all because there are some great places we want to show you, secondly because this unit actually goes to one of the Carolinas. Then again, the next iStill 2000 NextGen, after this one, will go to California. That's West Coast! But I won't fly over for installation. The new series I designed in such a way that (most) customers can set them up themselves. Just hook up the water and electricity, connect a few probes and two, three tri-clamps. That was an important goal with the new design: to limit our travel abroad, Bushman. Pre-assembling everything as much as possible was top priority.

All right! We are finishing up another rig! Another iStill 2000 NextGen. This unit is configured for boiling, mashing and fermenting. If the customer decides to use this unit for distilling as well, he just purchases a column and downloads the appropriate firmware.

Here are some pics. Of us putting the rig through its testing cycle, and with an example of a 4-step mashing procedure. Automated of course ... ;)

do you also sell the iStill 100 for boiling, mashing and fermenting only? I thought you also sold an iStill 50 but I can't see that on your website anymore.

Haha, Ma Flodder, what a name! Great find. To all: famous Dutch movie character. I think she made her own genever, right?

The i100 is for distilling only. Too small to be fitted with an agitator (or not economically feasible to do so).

It's interesting Odin, you and I grew up together in this hobby joining close to the same time. I look at my 3rd build (essential oil still) and although I have know doubt it will work great and serve my purposes I then look at the professional stuff you and your country are building it is impressive.

Incredible piece of work Odin. Built tough like an army tank, but beautiful to look at. It's rare to find that level of engineering, design and construction that so nicely melds into an aesthetically good looking form coupled with simple functionality. Nicely done.

Thanks for the kudo's Bushman! Yeah, we came a long way, didn't we? Your visit over to Amsterdam and me visiting you in the PNW are among the better memories.

Then again ... lets make some more history! Anyone coming to the 2017 ADI Conference in Baltimore?

We build everything now in the town of Woerden. Great place, because 70% of the Gouda cheese (the real stuff) comes through here. And 70% of the professional hotel and restaurant kitchens are build here as well. I never lack great welders and other technical personnel!

Euphoria, thanks for the feedback. The way you describe it is exactly what I had in mind: build like a tank yet appealing in design. Thanks!

We are shipping three units. The first iStill 100 NextGen goes to Indonesia, the second one will serve a Wisconsin craft distiller as product development still. The big iStill 2000 NextGen goes to North-Carolina. Well, after they are crated, that is.

Our last build before Christmas ... five iStills 100 NextGen. We'll test and dispatch them next week. Two will go to the USA, one to Canada, and one will go to a Dutch customer. The last one will be shipped to Australia. Here's a picture of Bob doing the insulation!

NEW WORKSHOPS!

What?

In January, February and March 2017 we organize new workshops. After careful consideration, we have changed the set-up a bit. We now offer three workshop. Each builds on the other:

- Introduction to Advanced Distilling;
- Distilling white spirits;
- Creating taste rich spirits.

The first workshop will introduce our revolutionary theory on distillation and how you can apply it to improve spirits production.

“Distilling white spirits” will focus on the distillation of while spirits such as vodka and gin. The products that are important to the craft distiller’s liquidity, so to say.

The third workshop, “Creating taste rich spirits” focuses on making top shelf rum and whiskey. Mashing, fermenting, and aging are added to the equation.

Each workshop will combine theory with practice. You’ll actually be distilling your own gin or rum or whiskey or vodka, both manually and via our automated systems.

How long?

If you take the individual workshops, please know that each one takes a full day. If you want to follow the integrated and certified education program, well, that pretty much consists of the three workshops combined, and takes three full days.

Certified?

Yes, apart from the individual one day workshops, you can also apply to the certified advanced distilling program. It takes place on Friday, Saturday, and Sunday. It will cover the topics of all the individual workshops and add a test and certification and diploma to that. We also have a craft distiller present to help you answer questions around legal issues, marketing, business start-up, and how it is to actually run a craft distillery.

Where?

All workshops take place at the iStill Assembly Hall in Woerden, the Netherlands.

How many attendants?

No more than ten. With two trainers around to help you out. We like our workshops intense and personal, so each and everyone of you achieves his or her personal goals.

How much?

Each individual workshop costs EUR 210,-. That’s ex VAT. Coffee, tea, and lunch are included.

The Certified Advanced Distilling Program takes three days and costs (including certification and diploma) EUR 995,- ex VAT. Again, coffee, tea and lunch are included. Hotels can be booked directly or with our help.

When?

January 28th: Introduction to Advanced Distilling

February 11th: Distilling White Spirits (like vodka and gin)

February 25th: Creating Taste Rich spirits (like rum and whiskey)

March 10, 11, 12th: Complete and Certified Advanced Distilling Program

The iStill 100 NextGen (100 liter net capacity) now comes with a 3.5 kW and a 4.5 kW heating element. You can choose what suits you best. Now, in the US 4.5 makes sense, but in Europe the maximum on household electricity is 3.5 kW, so that's what we had as a standard up until now. And it is still the standard. But now the whole set comes with an additional and slightly longer 4.5 kW heater as well. No additional charges. Just extra versatility. If you can run 4.5 kW, heat-up will now take 1.5 hours instead of 2 hours. Performance is up by around 30%.

Why not run both elements at once during heat up, if you've got the power? If you've got three phase connect the elements on different phases of your supply. And if you're in the UK, where 200A single phase is quite normal for a household, you can easily run them on the same phase on a 10mm2 cable. Or can the "computer" in the iStill 100 only control one element?

Still thinking about what's wisdom, Ma!

We currently have a manual version of the i100 ... as well as a fully automated and robotized version. For the manual, yes, why not put two elements in? You could heat up at 3.5 plus 4.5 = 8 kW and then decide to continue the run at 3.5 kW (finishing taste rich) or 4.5 kW (stripping, vodka production). But with the automated/robotized version, we could just go for the 4.5 (or maybe 5.5) and have the computer monitor power settings. Or have the user dial in power settings via the computer. Running two elements, and controlling them via the computer is no issue, it's just more expensive, and may not make too much sense from the perspective that the power feeds to the computer and the computer feeds the heater or heaters. In that case one 4.5 or 5.5 kW or two 4.5's would make as much sense ...

Yeah, we'd need the boiler sheet to be drilled with another hole, Ricky, so it would always be a redesign and integrated into future units. Wattage (max.) of the elements per cm2 would be the same: 9 W/cm2 max for both units: the 3.5 and 4.5 kW. We could also upgrade to a 7.5 kW single heater, but that would mean we'd have to add power management always. The 7.5 kW option would yield a maximum surface density of 10 W/cm2.
