Did their tour about a month ago. All small batch distilling, so small its all hand bottled. They brew beer also.
Tour was ok, been on better and worse. Ask the guide if they added enzymes, or just used the barely to breakdown the starches? He said yes, so I asked again and he said yes. I think that meant he did not know, or none of my business.

When in the area Ive drank lots of their beers---perfection straight through the line up imo.
And now that they distill, the same perfection. Never had bonded liquor so excellent. And Ive pretty much had em all.

They have a nuts and bolts type of tour that offers a deeper look into their processes. It is not offered every day or at your convenience. So if interested, call a few weeks ahead of your trip for the schedule. I did not have the time.

Interesting read of the company and story of the founder, too, who passed away earlier this year.

Something I failed to mentions about the AllTech process for their liquors.
The guide was not willing/able to explain very well, but at some point after
the distillation they cool the liquor down to 32f degrees or less (guide would not say exact temp)
then filter off any solids that occur.
