I'm currently using Demijohn's and racking into carboys (what I had from my beer brewing days) but I'm upgrading soon to a 20 gallon fermenter - something like this: http://www.homebrewit.com/aisle/p/5125

I agree. I use a whole bunch of 25L buckets. But, after doing this for about a year, I wish I would have saved the money on all the buckets and bought one or two large food grade drums. Can get 80-220L food grade drums for decent prices here. Could probably find used ones too. I'm sure you could find them wherever you are as well.="*MoonShine*"
It is kind of a hassel messing with 2 instead of 1 large one.

PS- the buckets are good for doing small experiments of new ideas though.

What do some of yall use to ferment in?
I use two 23 liter wine making jars plus an extra 4 liter bottle for top up. This gives me a total of 50 liters or about 11 gallons.

I use the 15 gallon white food grade containers that liquid malt extract was shipped to my local brew store in. Cut the tops out with a saber saw and have plenty of room to clean them out.
Just use a plastic garbage bag with a large rubber band or bungee chord to hold the bag on. No need to prick the bag with a pinhole, it will "burp" on it's own.

We got several different fermenters. My favourite is still the big ol' Rubbermaid plastic garbage cans. They're easy to work with and plenty big. You can make 60 litres of wash and still have room, so your not spilling if you need to move it around. We made covers for them out of plexiglass, but all you really need is a piece of plastic and poke a couple small holes in it. When most of the fermentation is finished and the grain (or whatever) has mostly settled, we rack it into glass carboys and let it finish up and clear some.

I'm using a food grade 18 gallon plastic barrel. Ring seal with a air lock. Great for big runs.
