Oh god, my 400 gallon batch had a great smell from tank to barrel but I clocked out and in the morning it smells like cow shit. I am horrified and scared that a rogue yeasts has pushed out our beloved yeast. I am so scared of our batch coming strange or with off taste. I have no earthly idea if I did something wrong or what :(

I am praying this is a new yeast with awful smell but heaven on the tongue.

Ugh the struggles of being a distillers apprentice.

If you're the apprentice then what direction were you given by the Master Distiller ... and what does he/she say about the current condition ?

Well he thinks it's from the ferment drums getting too warm. So I cranked up the heat pump and spaced them out more with a fan running some air in between them. I am moving on the filtering the grain out.
