ended up using a potable water safe epoxy clay stuff good for acidic/basic conditions and below freezing to over 250F, sealed the bottom 2" of the stainless steel tube. Once it cured overnight I then did a double layer of very thing silicone that is industrial and also potable water safe, same conditions resistant. I did maybe a 2mm layer 1.5" up the outside bottom of the tube and the bottom tip where the clay sealant is, let it cure overnight, then another 1-2mm thick layer; imagine like 'dipping' a tool handle in that kind of rubbery plastic stuff that dries and that's the effect of the silicone I put on the 'sink' tip of my ss thermowell tube.
Anyway now I have a completely definitely waterproof custom 3' ss tube for my temp sensor for any size ferment container up to 55 gal drum. I'm super happy with it, and it's working awesome with my rum ferment keeping it at about 92.6F. I had to wrap a blanket around my fermenter because the heat wrap alone wasn't enough to heat beyond about 89F it just couldn't do it.
