Most of my brewing is using homemade wooden cabinets and after doing a few of these I have ideas to share. First use polyurethane to finish and put casters 2" typically on the bottom. Use quick connectors to make it easy and this allows rewiring for testing or longer term changes. I use glue construction mostly.

Once a cabinet is put in use if I want to modify them I build are removable top.

A useful part is the sliding tray. I've found these at Ikea.

The larger table is used both for mashing and distilling.

I use casters for both my still and my fermenting cabinet. Adds flexibility to the process.

Probably a good idea to have locking castors on one end.
And castors that go around corners on the other.
