Fermenting

My ferment er/ boiler has a stand off and a screen about 4 inches from the bottom and i ferment on the grains is it ok to use the standoff for fermentation or let the grains settle to the bottom ?

Can you remove it?

You call this vessel a “fermenter / boiler”.... do you plan to use it to distill? Or, is it one of those “grainfather” type of vessels?

If you plan to boil your mash with grains in it, you’re in for a “rough ride”, that is, unless you have steam heat. An electric element or propane burner will scorch the crap out of your mash.

Or, is this vessel made for lautering / sparging your mash to extract the wort before fermentation?

It is hard to tell what you’ve actually got based on your description.

But, if you’re only going to ferment in the vessel, the false bottom should not be a big problem. The yeast will be in suspension in the liquid.

I have one of those nearly set up.
I plan to have steam from the boiler enter from the outside near the bottom
(the pipe running down from the top OUTSIDE so liquid won't drain away...)
With a sieve near the bottom.
I could use it as a thumper, I could distil grain wash in it,
I could ferment and distil grappa in it.

I was planning on using a grain bag and letting it rest on the stand off then mash the cracked corn in the bag letting it cool then add the yeast when it was ready i assume the yeast will flow to the wash thats below the stand off !
