Natural gas hot water heater without Steam as a burner

Just got a 12 gallon all copper set up. and about the same time I found a ng water heater that someone was getting rid of cheap.
So I cut it in half about the height of my pot, cut a notch in it for the drain and thermometer to slide down into. Removed the energy cut off (eco) from the thermostat probe. Took the dial off and found out that I could turn it up more to avoid power cycling. Used the top that I cut off for a base for the pot to sit in above the temp probe.
I need to get some sort of a valve to be able to control the flame height.but with the insulated sides I am thinking that it will heat up a lot faster, and be a cost effective build. I was also able to keep the pilot light and thermocouple in working order.
What do you think? Will it work? The big question is will I be able to control the heat with a on off burner? And if it works well why is this not used more often?
