I've got some twisted SS Gasline for my reflux condenser with a 5/8" female and I'm adapting to 1/2" (19mm) od hose.
I can't find this magic adapter anywhere.
Can someone that is already doing this point me to where I can find this Unicorn?
OR suggest how I can get from a to b ( I'm thinking bubble gum or tape at this point )

Never seen a 5/8 NPT. Is that the measured OD of the female threads? Could actually be 3/8 NPT. If you're looking for a barb type adapter for the hose, you'd need to know the ID not the OD. These are available at any hardware store if you happen to be near any.

Yup it is a 5/8" gas line fitting and 1/2" OD water hose

Have you thought about cutting off the connector and soldering on something that is more user friendly?

A gas-fitting adapter with a 1/2 fip... Still need some welding,
plumbing for the source.
electrical wiring for 240.
copper mech and lava rock.
but I can see the end...
Money is tight right now so it will be months yet but I'm still hoping for limoncello for Christmas.

I'm not 100% clear on your goal, but I had a bit of a struggle getting my various sized condenser threads running on the same size easy-disconnect water lines. An intermediate adapter (from 5/8 to 1/2 pt) will let you connect your 1/2 connector.
