Steamer rack/false bottom

Steamer rack/false bottom

I cook my mash on the stove in a regular SS pot. I stir it every few minuets, in general and, to try and avoid the corn from burning or coagulating on the bottom. My question is; should I place a steamer rack with a SS mesh screen on the bottom, to create a false bottom? I think it would be worth doing, I’m just curious as to what other think? Thanks!

The corn meal will find its way through a steamer rack. And with the rack in the pot, you won’t be able to stir it all the way to the bottom. So, I’d reckon it’s a “no go”.

If you’re heating with a direct fire (on a stovetop), then you’ve got to keep it stirring pretty much continuously.

Now, if you had a steam jacket around your kettle, it would not be as likely to scorch. Still, you need to keep the mash moving to avoid scorching.

I've never seen it done that way, but it's worth a try :thumbup:
A Baine Marie works good for cooking mash. And Direct steam injection is the cats meow
Also, using high temp enzymes will keep the mash thin. And a thin mash is less likely to burn :ewink:
