Lid seal with water?

I came across this site (Italian), I'm not going to buy anything but I noticed a "sealing" system of the lid with immersion in water or so it seems. Maybe I have seen it before but I have not noticed. It came back to me that once (many years ago then I was not distilling) a man had a keg of beer with water around him, he was talking to another elderly person and they mentioned the ashes ..
