Old world slivovitz/plum brandy video

Interesting short video on slivovitz production. The still is direct fired by wood, but the still kettle is a water bath.

Good link.

That brandy would be full of tails running it into a bucket till the whole volume becomes 44% abv....so much for doing cuts lol

It might seem that way but
The brandy has more heads than the average sugar wash and less tails
And that's the cuts for single run brandy

Note that they do not add water to the fermenter and because it’s so thick once it’s finished the Cap is on top, they just scrap away a couple of inches to expose the beautiful plum colour and run the lot. No straining.....

I do the exact same thing with my peach fermenters :thumbup:
