Hi

Mid Europe.
Still winter and very cold, nothing much to harvest. But, sun is heating up and very soon we can start.
I would like to start this years season with some pine liquor.
Something like the divine UNICUM from Hungary.

Anybody tried pine ? Any help or recipe welcome.

Hello Nabatean. PINE liquor? I'm not familiar at all. I've had Tanqueray Gin which reminds me of liquid tasty pine cones.

Hi

Recipe :
In March/April (depending on location)
Collect the light green pine shoots. After the bud is opened and when the needles are still soft.

Macerate in alcohol (50 degrees plus) for 3 to 4 weeks.
Colour is brown/green so rectify with coal.

Add spices (any suggestion welcome) sugar ?

Will start it as soon as pines are opening and put some pics here.

Hmmm, doing some reading the recipe is a secret formula of 40 herbs.

Ingredients on the bottle are: "ethyl-alcohol, demineralized water, sugar, extract and distillate of herbs and caramel". Also, that its oaked for 6 months.

Which confirms the sugar but doesn't offer a lot of help on the herbs lol

I like the pine taste of the UNICUM
And the pine in the greek retsina.

So, hoping to use a pine extract as base note and to build upon that. But first : pines must shoot to harvest.

I have not tried it because I live in the wrong part of the world. But der wo is close to you..and his recipe is “the one”. He will be along shortly to provide more data, but for now, read his thread.

And YES : spring is there
After months of neutral sugarwash, we start now the abundance of fruit and a drunken variety of infusions.

First in the row : pine trees
New shoots are on the trees and first harvest of 2018 is infusing.

PS In Middle Europe beech tree was shooting before pine but I prefer to start the season with pine.
