Press to extract the juice of my elderberries + grapes as good as I can without a press. And see how it goes. If the result seems okay I'll mix the 2 pomaces and ferment like you would for a "grappa" in a second fermentation bucket? Is this what you mean?
Yes I have a thumper, but I don't see the link with the need of pressing. Besides to avoid scorching obviously. I run a double boiler so I don't have scorching issues.
Do you use all the amount of backset? Good idea to use the feints. Do you use all the feints or rather the heads or tails part?
