suggestions for aging Uncle Jesse's Sour Mash

Post by swpeddle »

Hey all,

I just finished my 2nd run through my pot still of Uncle Jesse's sour mash recipe (1st mash run). I am now looking for suggestions for aging hwta I made. I have a largish aging bottle (133floz's) and I was thinking of some oak sticks to start, but what else? Anyone?

Thanks

Put it in a gallon jug, seal it with a corn cob,set it outside somewhere it will not be noticed. As you need some take it out, as you make more add to it.

um... yeah.
what.... *unique* advice.

what most people do who don't want to drink it white is put it in a bottle or jar with toasted or charred oak sticks and cap it a little bit loose so it can breathe some.
It also doesn't hurt to stand it in an area where it will get a range of heat and cold, humid and dry. (out of the sun though)
