I'm making a wash based on a recipe posted by Mikrobios on this site. It's sort of a wine-based/grape-based wash. I started it maybe ten days ago 14lbs of sugar in 25 liters of liquid, using an EC 1118 yeast and a Fermaid yeast nutrient. The wash remains pretty cloudy and is still bubbling. When I give a whiff of the fermentation trap, it smells fairly winey. I was wondering: how do I know when it's done? I'm shooting for about 20% alcohol, but don't want to strain the yeast. Will it just stop bubbling when it's done? Will the yeast fall out of suspension and clear the wash?
