You're soaking the wood chips at 90+%? I would tone that down to about 60% for aging.
Light travels faster than sound. That is why some people appear bright until you hear them speak.

I tried that once ............ yep you read it correctly: once !
You are missing a lot of nice tasties when soaking the chips at 90+%
60% will improve your product considerably !
