I got a stainless stock pot for a medium small sized pot still, 15L. It's all stainless, except the handles are riveted on with Al rivets.
Should I drill them out for copper rivets, or just not worry? They will be exposed to vapors at >60%... trouble?

The problem with aluminum comes from it's reactivity with acids. I'm assuming the handles are above the liquid level, and therefore should not contact the acidic wash. The vapor is ever-so-slightly acidic, but I think that would fall into the "don't worry about it" catagory.
Purposeful motion, for one so insane...
