got an interesting one fermenting out now, been going for 4 weeks or so and still a little left to go. i had 25 lb's or so of cooking apples collected from the last of a relatives tree and to that for a bit of sweetness i added 3.5 lbs of cannock chase blackberrys. made it in the usual way n let it all marinate for a week, well i cant resist a taste test every now and then and the flavour of this brew is something amazing, it has the taste of the apples but combined with a sweet almost nutty taste from the berrys, never tasted a wine like this. Anyways i have 25 ltrs brewing away and i plan to bottle some as a wine and distill the rest, i was thinking of ways to get more flavour into the stilled product, reading about making scnapps n thinking to the tuica plum brandy made by the romanians i know that they soak fruit in the distilled liquid so maybe i can do a stripping run and soak a few apples n berrys in it before running a second slower run... The other idea i wondered is what if i diluted it to drinking strength with some of the wine?
