Inability to convert Starch

Well, I took another sample for SG this mornin' and had a reading of 1.056. That is good enough for whiskey, so I skimmed off the starch layer. Then preped my yeast (EC-1118), transfered to ferm vessels and pitched yeast. The mash looks really good judging from what I tried a year ago. Oh, and after takin' the SG reading I dumped some in a shot glass, added iodine and it passed. I did filter the sample through a cotton ball in a funnel before doing either test.

I now know that malted grain other than barley will not neccessarily convert unlike grains. Hell, its all fun R&D with a reward at the end anyway, huh.
I'll let you know how it turns out.

Oh, it wound up at 12.5 gallons @ 1.056 SG, so no thin mash this time.
If it was easy everybody would do it.
