I found these the other day and thought I might mention it. In Luling, a small town near me, there is a small produce stand that is selling GIANT agave. The prices are also giant, and I don't think I could ever bring myself to chop one of these magnificent plants up. But, there they are... big ol blue agaves. The heart of one of the big ones must be several hundred pounds.
Any updates from you agave fermentors out there?

I'm still trying to find a decent price on a decent bulk volume source. Although I wouldn't mind growing agave myself. I have the space.. unfortunatley the 12 year wait for maturity may kill me first.

yeah, its an expensive material...
These folks wanted $800 for a medium sized. The biggest ones went for $1700, but it is HUGE! easily 8 feet across the bottom part...
so, I'm still looking...

Really?!
I could see declaring them to be a hazard to navigation, but a weed? Does anyone ferment them there?

Purely out of curiousity, how does one process the agave for fermentation? What part do you even use?
