Has any one made any brandy from mustang or muscadine grapes? I think mine are muscadine but to lazy to key them out. I am fixing to go pick about 100lbs (here in 2hrs not looking forward to it either. in a tractor bucket and walkie talkies; talkabout redneck but hey). I was wondering if it turned out alright and about what alcohol level was the must? i Was thinking about 7-8 But kinnda worried about a bacterical infection at that low. because i tried making a grappa out of last years wine batch dregs and peel bag but it didnt completely ferment there was 32 gallons sugar to about 15% and like 5 EC-1118 packet and good temp so i dont know.We usually make out wine to about 15% ,but i want to have a good flavor. I plan on making about 30 gallons of must to distill and about 20 for wine i have a damn good recipe for the wine but i figured id copied it up until the sugar and just cut it back a bit.
5 gallon recipie
2 gallons of grape juice that was cleand grapes in boiling water just above level of grapes and smashed with potato masher
2 gallons of water
5 campdem tablets
4 tsp of yeast nutrient
20 drops of pectic enzymes
24 cups of sugar
pastur champane yeast.
should have a starting garvity of about 1.10
when is never enough?
