What am I going to gain from using Uncle's Sour Mash?

What is the difference from that and just making a new mash every time?

To answer your question it gives you the same taste . If you would bother to read fourm parent sight you might find some of this out. And please post in correct topics.
I use a pot still.Sometimes with a thumper
