PLEASE HELP.... when aging in a charred white oak keg, is it the amount of time aging that we start to get that sweet whiskey smell...or should i put another ingredient into the keg while aging...

No need to add anything to your barrel while aging, if it is a brand new barrel then what you will get is going to be more like bourbon/ kentuky style whiskey. After several uses then your going to start getting results resembling more of a scotch/ irish whiskey. Now if you have a used barrel, and want the american type profile, then add some of the oak chips that you can get for making wine.
