I havent' made rum yet, and I've never used american oak chips, nor chips for that matter. I make my own oak chunks and I throw in 4-5 middle-finger sized (toasted at 200 deg. C for 2 hours) into a 3 liter glass jar of distillate.
When I first started out, I noticed that at the get-go the wood flavor was too much, i.e. it tasted like wood, rather than like whiskey (I make whiskey). However, a couple of weeks down the road, the woodiness tones down, and the whiskey flavor starts coming through...
I'd assume that it'd be much the same with rum.
Stick with it. If it never gets any better, you can always re-run it. Stick with it for posterity.

The only way to test is to taste it. If it is too strong for your liking you can always cut it with some neutral spirits.Enlikil wrote:I have 4 once's of American Oak chips. I put them in 1 half gallon of rum. been on it for a week? its dark as hell. should i pull it off now?
Never do tomorrow what you can do today because if you like what you do today you can do it AGAIN tomorrow!

i use oak chips in my rum. Last time i tosed a strong handfull in with a gallon of rum. After 2 weeks i straned it and tested. It had a strong oak flavor which i like. After a few more weeks the oakyness calms down. I did the same with a apple cider spirt that i did and loved it. the apples and oak really worked well together.

I did the same think and I tried it last night. It was almost as good as I want it. The longer you leave it, the stronger the taste. As Hacker said "you can always cut it with some neutral spirits" Or filter it with active carbon, which will remove about anything.
