Can I store whisky/gin in stainless steel tanks for a month or two?
Do I need a specific grade stainless steel?

Ive aged in ss kegs and have never had a problem.
I use a pot still.Sometimes with a thumper

if its food grade SS i don't see why not... i use empty SS kegs with a cork to store my striped runs till i get enough to do a spirit run, sometime 2-3 months

Absolutely, but as Peter says, make sure it is sealed. Also the fuller the keg the longer you will be able to store, but one to two months won't be a problem. Also keep the keg in a cooler spot if possible.
Never do tomorrow what you can do today because if you like what you do today you can do it AGAIN tomorrow!
