First fruit fermentation failure

I attempted my first fruit wash earlier this week and failed. heres what i did:

took 50 lbs Korean pears, cored and pureed them with skins on. Ended up with 25 lbs of Pear muck. Placed in 32L plastic fermenter, in separate fermenter placed 3L hot water and 5Lbs sugar. once dissolved, placed in with pears. Topped up to 25L w/ cold water. added enzyme and pot distillers turbo at 40 C. let sit in 60 F room. After nearly 2 days no fermentation at all, it appears it is starting to clear. I believe i killed my yeast by adding it when wash was too hot. So i have now done the following:

Re-hydrated by dumping it back and forth 4 times
checked SG, 1.060
adjusted PH from 4.5 to about 4.8 by adding more water
added another packet pot distillers turbo at room temp.

now just waiting with my fingers crossed to see what happens.

What is pot distillers turbo?Why the enzymes And that sounds like you making it a bit thick.I freeze and grind whole pear but I do remove stems.Id use the amount of pears you used in a 13 gallon wash with 20 lbs sugar.ec1118 is a great yeast for this and I boil my water with sugar and 1/4 to 1/2 cup lime juice. Pour this over fruit pulp and stir to blend well.then add water to get the 13 gallons stirring well to get air into wash.Take 1/2 gallon of wash out and add yeast{4or 5 packs} for prestarter add back to next day. Has worked for me every time.

my one and only atempt at pear turned to vinager. stoped my press up; every thing about that batch was bad. when I decided to try again; the tree (at my mother inlaws) the power company cut it down. Too close to the lines. Anyway maybe try ec-1118 yeast I think it is used for ciders.

The distillers turbo yeast on that sight says use it with sugar,The distillers yeast I also use . Its not a turbo. Will do fruits and is a great yeast . I really like it with rum and also will use with the ec1118 in fruits wash/mash in hot weather.

I've never done a fruit wash but 60F is a little cool for a good ferment, isn't it?
PDA1 on a 19 gallon Whirlpool water heater. We bring good things to life.

Didnt catch that when I first read the post that for sure is low end of ferminting fruits.

Like tater said,take a small bit of your mash,add some water{warm,under 100f}and add 2 or 3 packs of 1118 yeast,and let it get going real good,then add it to your mash.It should start it up by the next day.

Well i got up this morning and its fermenting good sitting in my kitchen at 75 F air temp.

Opened up the fermenter and it has a smell of vinegar, so im guessing its F@#$'d. Should i let it ferment out and see what it does, or am i wasting my time when i could be using the fermenter for a corn wash.

If its working good I would think Let it do its thing and see what happens ..what have ya got to loose?
