I attempted my first fruit wash earlier this week and failed. heres what i did:
took 50 lbs Korean pears, cored and pureed them with skins on. Ended up with 25 lbs of Pear muck. Placed in 32L plastic fermenter, in separate fermenter placed 3L hot water and 5Lbs sugar. once dissolved, placed in with pears. Topped up to 25L w/ cold water. added enzyme and pot distillers turbo at 40 C. let sit in 60 F room. After nearly 2 days no fermentation at all, it appears it is starting to clear. I believe i killed my yeast by adding it when wash was too hot. So i have now done the following:
Re-hydrated by dumping it back and forth 4 times
checked SG, 1.060
adjusted PH from 4.5 to about 4.8 by adding more water
added another packet pot distillers turbo at room temp.
now just waiting with my fingers crossed to see what happens.
