I have been thinking about using dry red wine to produce a grape brandy but have not been able to locate the info I'm looking for.
Blanikdog, I notice you were playing around using some backset with red wine, any result?
I was hoping to just run the wine through the still, retain some of the flavours and adjust the final result with a dash of Port or Sherry or similar.
I was concerned though that the dry wine may contribute to a dry flavour spirit with all the tannins and such.
