Many here do only sugar washes and they let them clear before running them, so that the chance of particles burning to the bottom of the boiler is remote. So, the 2-inch sankey adapter is sufficient.

However, I like doing grain mashes, and when they burn, you want to get the crap outta there. So, the method of cutting a large hole in the top and bolting a flange that is attached to the column (or lyne arm, if you're a pot stilller) will still allow access to the inside of the boiler.

(Doing this also allows the boiler to double as a mashing vessel, and I need one of them!)
