This is not an easy answer but....you go by brix weight then sugar invert percentages.

brix / Pounds at 68 degrees F.

80.......... 11.77
79.......... 11.72
78.......... 11.66
77.......... 11.61
76........... 11.55
75........... 11.50
74.......... 11.45

Now sugar invert is total % of sugar in molasses, problem is not all of it is convertable to ETOH. Normal % not convertable is 3 to 4 %.

So lets take my molasses, it is 74 brix and 40% invert sugars. At 68* it weighs 11.45 LBS, total sugars is 40% but an average of 3.5% is not convertable so I can use 40% - 3.5% = 36.5%

11.45 X .365 = 4.17925 or 4.18 lbs of usable sugar per gallon.

Now that you are totally confused, go make some rum....Pugi
