Potato water sugar wash recipe
Here is a recipe for a good vodka tasting sugar wash that ferments easily.
Give it a try,and you will never make another turbo!
The potato water provides the missing neutrents,and leaves a mild vodka flavor.
8 potatos
10 pounds of sugar
6 tsps of DAP
3 tsps of tartaric acid
1/8 tsp of geritol tonic
1/8 tsp of epsom salts
2-3 packs of 1118,or 1/4 cup of bakers yeast in a gallon starter.
Make the starter at least 48 hour ahead of time so you have lots of yeast.
Make the starter with a 1/2 cup of sugar in a gallon of 100f water,and leave it open for 48 hours.{you can cover it with a coffee filter}
After 2 days,Litely wash the potatos,and cut them up into large pieces.
Boil them gently in a large pot for 20 minutes or so,and dont cook them till they start falling apart.Remove the potatos from the water,and dissolve your sugar in the hot potato water.{you can eat the potatos for dinner}Add this to your fermenter,and add more water to the 5 gallon mark,and add the DAP,acid,geritol,and epsom salts,and stir it up real good to mix in some air.Shake up your gallon starter,and pour it in.
Leave it open for 3 days,then put an airlock on it.{you can cover it with a cloth or something,but it needs the air}
If you keep it in a warm place it will ferment out in 14 days or so.If its cooler,it will take longer.
This makes a good vodka with a potstill.Much better than turbo yeast,and its cheaper,by far

By using the water from the potatos,You get the needed neutrents to ferment the sugar,but not much flavor from the potatos.If you do a mash with potatos,you would get alot more flavors from them,and a violent fermentation.I developed this recipe as an alternative to using tomato paste for neutrents,and it works.For the guys that are using the turbo yeasts for their neutral,this is a cleaner,cheaper way to do it,and it makes a good vodka and has a different flavor profile.

I was going to mention the same thing. I have two different packs of yeast Nutrient that are different but sold with the same name. One is Dap and the other is yeast extract. Didn't what they were untill I read the ingreadients...zymos wrote:"Yeast Nutrient" is a generic term-could be anything. Often a major ingredient is yeast extract, for example.
If it looks like salt, then it is probably all or mostly DAP.
Yes,there are a few variations of stuff out there.Yeast energizer is usually a mix of Diamonioum phospate,b vitimans,magneisium,zinc,and sometimes yeast hulls.
Yeast neutrent is usually Diamonioum phospate,and sometimes urea.
Yeast hulls are basicily dead yeast.You can put a pack of yeast in the boil and it will do the same thing.

Just look for any LIQUID vitimans at the drug store.They should work.
The liquid kind works much better.Just dont use much because it will probably have iron in it,and too much iron will cause some flavors.It only takes 2 drops for 5 or 6 gallons and it will do better than 4-5 regular crushed multivitimans without the extra flavors they give the wash.The liquid stuff gets pretty well used up during fermentation so theres not much left over to cause flavors when you distill it.It made a really clean wash.Ive been using raw sugar also,and the potato water wash is almost as clean.It just tastes more like vodka.

I tried it without any neutrents and it was working,but alot slower.The potato water provides alot of neutrents,and a little flavor,but it doesnt provide enough nitrogen so you should at least use the DAP.I did most of these ferments at 65f,but I also did 2 of them at a constant 75f with a brewbelt.The warmer ones fermented faster,but tasted pretty well the same.
