I am about to become the keeper of 25 gallons of fresh apple cider. In return, I have promised some apple brandy.
I am wondering if I can boil it down to reduce the volume and increase sugar content and flavor. I have done this for beer making with grain mash.
I would decrease or eliminate the normal amount of added sugar accordingly.
Would this make the resulting wash too flavorful, too acidic, too....?
Any thoughts are apreciated.
