Experimental Tequilla!!!

OK not really tequilla but tequilla flavored likker. I have been working on this for awile and have tried everything under the sun to make it work. Finally getting it narrowed down to a acceptable drink.

The Wash:
I took 20 lbs of yellow onions peeled and chopped coarse added to 2 gallons water. Boiled it for 2 hours then drain off liquid and set onions aside. I measured with my hydrometer the liquid and actually got a reading of 1.020. I know what you are saying right now " ONIONS FOR TEQUILLA'. What it comes down to is the Agave plant and onions have the same sugars in them, it is called inulin. The jerusulem artichoke has it as well. I dont have acsess to the jerusulem artichoke so I use onions. Back to the subject at hand.....Add the onion liquid to water and inverse sugar to make a total of 5 1/2 gallons at a reading of 1.065. To this add 2 lbs of uncooked cracked corn and 1/3 cup bakers yeast and 3 cups of cooked onion. Let ferment untill dry.

Runnin it:
I run this through a pot still 3 times. First two will have to much onion flavor, the third brings it all together. Air for a couple days and drink.
