Re: Deathwish Wheat germ recipe

Post by goatroper57 »

hello dwgr
i was reading your recipe i got a 3 gl. pot that i could use to cook the mash in would i beable to use it then add the rest off the water in my 5gl fermenter and my pot still is only 5gl to and your recipe calls for somthing called citric acid and dap. as iam using a yeast called (Liquor Making - Liquor Quik - Super Yeast X-Press) each packet makes 6.5 gl would i need to add that too and i was wanting to use sweet feed instead of plane corn and wheat grain so i guess iam askin the best way to do it useing
sweetfeed ,suger, water and super yeast plus can i cook it in 3gls to start then when i put it in the fermenter can i mix in the remaining water needed to bring it up to 5gls then let set and do its job
thanks

What you are trying to do with the sweet feed is more similar to Uncle Jesses's Simple Sour Mash. With your turbo yeast you shouldn't need DAP. Citric acid is to adjust the pH of your mash. You may not need that. It depends on your water mostly. Also lemon juice is a common substitute for citric acid.

DWWG doesn't call for dap. The nutrients are in the WG. In any case the turbo yeast already contains nutrients. I'd be more worried about having too much nutrient. You should probably use another nutrient free yeast as called for in the recipe. Don't worry though it should turn out anyway. If you do use turbo split it between two batches or the nutrients will be too concetrated. Remember this is for up to 20 lbs of sugar not the 10 in the Dwwg recipe. As said citric acid is used to adjust the ph- about a tsp/5 gal depending on your water. Measure it. Lemon juice can be substiituted at a rate of about 5TBS/tsp citric, but again measure it. It seems Lemon juice acidity varies greatly. I've had to use 2Tbs and up to 7 Tbs. / gal.
