Hello,
I would like to know the difference between boiling and freezing the fruit to do a fruit mash. (I will be using pears)
Seems to me boiling has several advantages over freezing: quicker, easier and sterilizes things.
But is there a difference in the taste ?
Also I'd like to add 2kg of sugar, for a 20L wash, is that the ball park amount ?
