just printed recipe and i live next to a 200 acre peach farm and this sound like my next adventure . tater uses 1 pack of
E1118 and 1/2 oz distillers yeast what is E1118 and can baker yeast be used and what amount my corn adventure was ok but not what i had hoped. big thanks to all

bakers yeast goes to 10% alcohol ec1118 goes to 17% that does not mean you "max" the yeast out stay below the max.

use all juice. no cold storage ones they aint sun ripe. go bout 50 lb to the barel. peach is a hard scent
to hold clear. with all juice aint no problem. with all them peachs they squezein em somewhere makein cider keep your ear to the ground an youll find out where. dont go talkin likker around that place if ask you makein wine.

Can use any yeast ya wanted to .I was using that mix at the time playing around with yeasts during hot day summer temps but cool nights.Fermenting in a unconditioned shed .Ive used bakers yeast and the ones in recipe separate also . I prefer the ec1118 in cooler weather but in hot weather the distillers yeast . Seem to get about same ferment out of either one or mixed as far as taste and yield go.I used bakers yeast for many years when it was either that or wild yeast and have no problem using it for any wash /mash.It in my taste is best ya can use in molasses washes with distillers yeast coming in second.
I use a pot still.Sometimes with a thumper

how much baker yeast would you use for this mix peaches has about another month before they start comming off trees
and the man that owns the place is a friend so peaches are cheap and this sounds like it will have a great taste

I used this same recipe to make my pear schnapps. It smells great as wine, but I have to wait till it clears to run it. I'm sure it will work great though.
There are none so blind as those who will not shut up and listen.

I am going to try and use elberta peaches for this recipe, they are bigger and sweater. But I also plan on using the smaller drop peaches from a couple of orchards around hear. I can get the small peaches free after the trees have been picked.

gotta be quick most orchards is prunein an sprayin right after last peach is picked cause of bacteria an fungus an such. elberta is a good peach cause when you hand squezein the pit is free the bell of georgia you gota cut out. when you squezein watch out for the point of the pit cause they is sharpe.gotta go gentel on the suger. ole boys pa liked a early peach . ole man early had a couple trees
